Historia de la bebida nacional del Perú:
El Pisco es un aguardiente de pura uva obtenido de la destilación de los caldos frescos de la fermentación del mosto de uva. La destilación de Pisco se produjo con la llegada de los españoles. Asimismo, el sacerdote Miguel Cabello de Balboa, en sus "Misceláneas Antárticas" escritas en 1586 menciona expresamente los valles de Ica, Humay y Pisco al describir la costa sur del Perú.
En el siglo XVI se produce la interacción de una tierra propicia para la uva, con una cultura tecnológica desarrollada en los valles del Sur Peruano, de donde nace el Pisco.
Cronistas de la época señalan que fue en la hacienda Marcahuasi, en el Cusco, donde se produjo la primera vinificación en Sudamérica. Asimismo, cuentan que Mateo Atiquipa fue el primer enólogo americano. Sin embargo, fue en los valles de Ica que esos cultivos se expandieron ampliamente debido a las propicias condiciones climáticas del lugar, razón por la cual es en esta zona donde se desarrolló con gran fuerza la industria de vinos y pisco.
La actual República del Perú en aquellos tiempos siendo el epicentro del poderoso y hegemónico Virreinato del Perú, los españoles utilizaron el Puerto de Pisco para exportar vino y pisco hacia Europa y en siglos posteriores se exportó pisco hacia Norteamérica.
El nombre Pisco es una palabra proveniente del quechua, que significa "avecilla" o "pájaro" y figura en los cronistas y religiosos llegados con los primeros conquistadores. Así, Cieza de Leon en su crónica General del Perú de 1550 escribía: "Pisco que es nombre de los pájaros". Además de llamarse pisco al aguardiente, al pueblo, al puerto y a las aves que habitan esa zona también se llamó pisco a los recipientes de arcilla contenedores de este destilado de uva.
En los archivos de la República del Perú existen documentos históricos de la época virreinal que confirman que el Pisco es un producto que nació y siempre se produjo en Perú.
El cronista Francisco López de Caravantes, decía en 1630: "Dase allí el llamado aguardiente Pisco por extraerse de la uva pequeña; es uno de los licores más exquisitos que se bebe en el mundo".
El Diccionario de la Real Academia Española de la Lengua, así como La Enciclopedia Británica definen al Pisco como un agradable aguardiente moscato producido en el valle de Ica en Perú, y también añaden que la bebida nacional del Perú es el Pisco Sour.
Actualmente las únicas zonas productoras de Pisco están ubicadas en la costa de los departamentos de Lima, Ica, Arequipa, Moquegua y los valles de Locumba, Sama y Caplina del Departamento de Tacna en el Perú.
El nombre Pisco y su denominación de origen sólo es aplicable a los piscos producidos únicamente en el Perú. Los aguardientes de otros países que se comercializan bajo el nombre de pisco están usurpando el nombre de este genuino producto peruano; son de calidad mediocre, degradando y desvirtuando el nombre pisco, que en muchos casos se asocia a estos licores y sólo pretenden causar confusión y desconcierto en los consumidores.

Mais um episódio de violência policial gratuita em shows de rap. A PM investiu contra o público presente na Praça da Sé com bombas de gás lacrimogêneo e balas de borracha. A justificativa foi que alguns presentes subiram em uma banca de jornal para assistir ao show e se recusavam a descer. Os dois vídeos que fiz mostram Mano Brown tentando apaziguar os ânimos (ao contrário do noticiado pela UOL, que o acusou de incitar o tumulto), e a banda começando a tocar Negro Drama e Um Por Amor, Dois Por Dinheiro. O apetite da polícia acabou com a festa. A violência se espalhou pelo centro da cidade, com PMs ameaçando até jornalistas com credenciais à vista, e evacuando a praça e o backstage do evento) com violência. PISCO (Pisco documentary. Part 1)
The first grape stocks were brought from the Canary Islands to the Ica oases south of Lima in 1551. Local winemakers soon started making a grape brandy they shipped to other Spanish colonies from the port of Pisco that eventually gave its name to the local grape brandy. Now, outstanding quality "pisco" full of flavor, bouquet and body is made in the warm oases dotting the dry coastal desert, all along the Southwestern Pacific coast of Peru, from Lima to Tacna.
Pisco is Peru's national drink and is made in traditional distilleries in the Mala, San Antonio, Santa Cruz de Flores, San Vicente de Cañete, Pacarán and Lunahuaná wineries south of Lima. Further south, in Ica, over 80 wineries in the Chincha, Pisco, Ica, Palpa and Nasca valleys distill outstanding pisco, as well as further south, in the Arequipa valleys of Majes, Vítor and La Joya. Closer to the southern border in Moquegua, about some 10 wineries produce not only pisco but also "mistela", a mix of pisco and wine. Fine pisco brandy and apricot fruit brandy is typical of the 35 wineries in Tacna, in the southern end of Peru. At several wineries visitors can stay on the premises and take part in pisco making during their stay. The grape* harvest in February and March is a truly popular celebration and February 8 is Peru's Pisco Sour cocktail day. Pisco brandy made from "Italia" and "Quebranta" grape stocks are most popular while "acholado" blends a variety of grape stocks. All "pisco" is made 38° to 46° proof. Renowned "pisco sour cocktail" one of the world's most delicious is made by shaking 3 oz. pisco, one oz. lime juice, one oz. gum syrup, a half egg white, and four ice cubes. Sprinkle 2 or 3 drops bitter on top after pouring.
*"Pisco grape" types: Quebranta, black, Mollar, Uvina, and the aromatic ones: Italia, Torontel, Albilla and Moscatel. |
